Litesse® II solution has been introduced by Danisco Sweeteners and can be used as an alternative to high fructose corn syrup (HFCS) in applications where the goal is to reduce sugar or lower glycemic load. With functionalities similar to HFCS, Litesse can serve as a humectant, provide solids, decrease water activity, control crystallization and enhance flavor and texture. In addition, Litesse is a source of prebiotic fiber. Potential applications include the re­placement of HFCS in beverages, nutrition bars, baked goods, confections and frozen dairy products.
